Curry leaf clams

Ingredients

  • 1 dozen clams
  • 75g chorizzo
  • 1/4 cup diced onions
  • 1/2 tsp mustard seeds
  • 8-10 curry leaves
  • 1/2 tsp minced garlic
  • 1/4 cup chopped onions
  • 1/4 white wine
  • 1 tsp butter
  • 1 tsp vinegar
  • Few tbsp olive oil
  • Salt and pepper according to taste

Steps

  • First cook the chorizzo in a pan for a few minutes. Chorizzo itself has a lot of fat and you will not need extra oil. Keep mixing so that lumps are not formed.
  • Remote the chorizzo and in the same pan heat some olive oil for the next step.
  • Add mustard seeds, curry leaves, minced garlic and onions and saute. At this point Add salt and pepper according to taste.
  • Once the onion caramalizes, add the wine and bring it to a boil.
  • Add the clams and cover it to let the clams cook.
  • The clams will open when cooked. After that take the clams out and keep it on a baking tray.
  • In the same pan add butter balsamic vinegar to the remaining ingredients and reduce the sauce.
  • Put some of the reduced sauce in each of the clams along with some chorizzo, bread crumbs and cilantro.
  • Bake the clams for 2 minutes at 400 F and broil for 30 sec - 1 min untill the breadcrumbs turn golden.
  • Serve with lime juice squeezed over them for a delicious appetizer.
