Italian orzo soup

Ingredients

Soup

  • 2 spicy Italian sausages
  • 1 tsp chopped garlic
  • 1 tbsp tomato paste
  • 1 whole tomato
  • 1 tsp smoked paprika
  • 1 cup of chopped onions
  • 1 cup of chopped sweet peppers
  • 4 cups chicken broth
  • 2 cups orzo
  • 1 tsp calabrian chilli paste
  • Olive oil
  • Salt and pepper according to taste

Garnish

  • Some chopped cilantro to garnish
  • 1 soft boiled egg per serving
  • Feta cheese
  • 1/4 tsp calabrian chilly oil or paste per serving

Steps

  • Cut the sausage into small pieces and in a cast iron pan or a heavy bottom pan cook them in some olive oil till golden brown.
  • Take the sausages out of the pan and saute chopped garlic, onion and sweet pepper in the same pan.
  • Once the mixture turns translucent, add the chopped tomatoes and cook till they are soft and mushy.
  • Next add tomato paste and calabrian chilli paste to the mixture and mix well.
  • Now add the chicken broth and bring it to a boil. At this time add salt and pepper according to taste.
  • Whem the broth mixture comes to a boid, add the orzo and cook till it is al-dante. At this time, you can add more broth or water to make it soup-ier!
  • Serve it in a bowl with a soft boiled egg cut in half and sprinkled with calabrian chilly oil. You can also add some cilantro and Feta cheese as you like!
