Cut the sausage into small pieces and in a cast iron pan or a heavy bottom pan cook them in some olive oil till golden brown.

Serve it in a bowl with a soft boiled egg cut in half and sprinkled with calabrian chilly oil. You can also add some cilantro and Feta cheese as you like!
