Peel the green papaya and cut it in slices. Then shred them to approximately 2-3 mm thick slices. If you have a food processor, this can be done very easily.
Soak the shredded papaya in water for 15 minutes to help reduce the bitterness. Then drain it and pat it with a paper towel to remove excess water.
In a pan, add oil and set it to medium heat. Add the nigella seeds and cashews and saute it for 10-15 seconds. This gives the cashews slightly toasted flavor.
Now add the shredded papaya and saute it for 5 minutes. After that add a pinch of salt.
After that add sugar and allow it to melt. Stir lightly to mix everything well and let it cook for 30 minutes in medium heat. Papaya will become translucent by this time and look like plastic, hence the name. The papaya should still hold the structure and not mushy.
If the mixuture becomes thick, add few table spoons of water at a time. You may need 1/2 - 1 cup of water.
Now add rest of the dry fruits and mix it well. Keep the heat on for 2 more minutes so it helps soften the fruits.
Turn off the flame and add the lemon juice. Let the chutney cool down and it is ready to be served.
